SWEETIE PIE MAC AND CHEESE FOR MAC

Add butter, margarine, pepper, Velveeta cubes, sharp cheddar and Colby jack cheeses and stir while adding the whole milk. Add in the evaporated milk, egg, and cream mixture, and stir to combine.

Pour the macaroni into the casserole dish.

In a medium bowl, combine the evaporated milk, eggs and sour cream and whisk thoroughly.

Preheat the oven to 375 degrees and grease a 3-quart casserole dish with butter.

Drain the macaroni under cold water for a few minutes to cool. Stir in the macaroni and cook until al dente.

In a large pot, bring 6 cups of water to a boil with 1 tablespoon of salt.

1/3 lb fancy shredded mild cheddar cheese (for topping).

Sprinkle more seasoning over the cooked chicken or fish to taste. Take out the smaller pieces first and drain the excess oil on paper towels. Using tongs, turn each one over and cover the pan to allow them to cook for an extra 6 minutes. In little batches, carefully place a few pieces of the chicken or fish in the oil and fry for 6 to 8 minutes. Heat about 2 inches of the oil in a cast iron pan until it reaches 350 degrees on a candy thermometer.Shake each piece of chicken or fish piece in the bag until fully covered in seasoning. Combine the flour or cornmeal, base seasoning and red pepper in a plastic bag.In a large bowl, mix together the buttermilk and eggs, then allow the chicken or fish to soak in the mixture for a minimum of 15 minutes.Cover the chicken or fish pieces generously with the base seasoning mix.8 boneless catfish fillets (7-9 ounces each).
